Copenhagen has 10 independent specialty coffee and cake spots on Crumb & Crema, covering five roasteries plus multi-roaster bars and bakery-led cafes. Coffee Collective, founded in 2007 by Klaus Thomsen, Peter Dupont, Casper Rasmussen and Linus Törsäter, established the Nordic light-roast approach that still shapes the city's cafes. They are joined by four other in-house roasters: Prolog Coffee in Vesterbro, April Coffee Roasters in Østerbro (founded by World Brewers Cup runner-up Patrik Rolf Karlsson), Andersen & Maillard in Nørrebro and Kontra Coffee in Østerbro, where the 2001 World Barista Champion still runs his 1952 Probat drum roaster.
Andersen & Maillard, in a converted bank building on Nørrebrogade, is the standout for cake: co-founder Milton Abel trained at Noma and Amass, and his espresso-glazed croissant and cardamom kouign-amann are among the most copied pastries in Scandinavia. The espresso machine is a Synesso. April runs a Modbar under-counter system, keeping the full bar open to the customer.
